Holiday baking - Peppermint Kiss Chocolate Cookies

This is the first year that I've had to think about "teacher gifts" for all of the amazing people that help & guide Bennett in his life. From his preschool teachers, to his church Sunday school teachers. I kept trying to think of something super creative and useful to make them. But I just kept coming coming back to wanting to bake them something yummy and Holiday-ish. Who doesn't love a home-made baked goodie??

I headed to Walmart, got all of my ingredients, grabbed my excited 3 y/o, turned on Christmas music and.... let the baking commence! This cookie recipe is sort of a mash-up of recipes that I found, buy they turned out perfectly!

These were super easy and so so good!! The perfect combination of chocolate and peppermint. And they will look so cute all wrapped up in a goodie bag with home-made cards. Bennett will be so excited to take them to his teachers!!

And how rude would that be if I didn't share the recipe with you? ;-)

  • 1 Cup Sugar
  • 1/2 Cup LAND O LAKES Butter, softened
  • 1 Egg
  • 1 1/2 Teaspoons Vanilla
  • 1 1/2 Cups Flour
  • 1/2 Cup Unsweetened Cocoa
  • 1/4 Teaspoon Baking Powder
  • 1/4 Teaspoon Baking Soda
  • Candycane Hershy's Kisses 

    *Prep Time: 45 Minutes - Should make appox. 3 dozen cookies

Preheat oven to 350 degrees F. Combine 1 cup sugar and butter in a large bowl. Beat at medium speed, until creamy. Add egg and vanilla; continue beating until it's well mixed. Reduce speed to low; add flour, cocoa, baking powder & baking soda. Continue to beat until well mixed.

Shape dough into 1" balls. Place 2 inches a part onto ungreased cookie sheets, I recommend baking on Parchment Paper. Bake for 9-11 minutes or until set. Take them out of the oven and quickly press a Candy Cane Hershey Kiss into the middle of each cookie. Cool completely before eating or storing.

Things to note: These cookies don't flatten very much int the oven, so they won't appear to be done, but you will want to make sure you take them out between 9-11 minutes so they don't overbake. They continue to set while cooling. And the Hershey Kisses will take between 1-2 hours to cool down & harden again after setting them into the warm cookie.
