With the weather actually getting sunny and into the 70's (sometimes!), I'm trying to take advantage by getting outside with the kiddos and doing Spring-y things. One of the best things about Spring & Summer? Picnics!! And ice cream! Combine the two and I'm a happy girl.
Last weekend, we had a little picnic in our backyard, my Sister and Nephew joined us as well! We grilled some hamburgers, and Easton ate a PB&J because he's picky and hasn't figured out how yummy burgers are yet. He's missing out, but the rest of us definitely enjoyed them. Something about a juicy hamburger fresh off the grill just screams Spring/Summer time to me. I have a feeling we'll be grilling a lot this Summer, and hanging out in the back, just enjoying each others company... and the good food of course.
A picnic isn't complete without some kind of cold treat. Whether it be home made Popsicle's, strawberry sundaes, smoothies, or in this case, a Pink Lemonade Ice Cream Pie in an Oreo Crust. It's a super simple recipe, which is always a plus. But it tastes SO good and it is seriously the best warm weather dessert.
My only concern with desserts like this, is that it's actually kind of messy with little kids. Which really isn't too big of a deal, but I'm kind of a Type-A control freak when it comes to that stuff. I really trying to be more laid back about messes and just let the kids get dirty, I mean, it's not the end of the world and they are easily cleaned up afterward.
So as I was shopping at Walmart for my picnic supplies, I was sure to grab a can of Wet-Nap's for easy clean up.

Onto the recipe!! Like I said, it's really really easy. And I promise you won't regret making this pie.
- Oreo Pie Crust (I got mine pre-made at Walmart. They also have graham cracker crusts that would be awesome as well!)
- 1 quart vanilla ice cream
- 1 (6 oz) can frozen pink lemonade concentrate
- In a large bowl (I used my Kitchen Aid), mix ice cream & lemonade concentrate until creamy.
- Spread mixture evenly into pie crust.
- Place in freezer for about 30 minutes or until set.
