Recipe: Sausage & Vegetable Spaghetti With Vodka Sauce

 Spring Break has come to a close, and we're back to the grind. As much as I love routine, it's so nice to have freedom & open schedules. But Summer is so close! I'm looking forward to it even more so because we spent a good part of Spring Break out at Ocean Shores playing at the beach with friends, and it made me yearn for warm weather and lots and lots of time at the beach. :-)

Before we left for the coast, though, we had this amazing dinner. I couldn't help but document and share, because it's definitely worth your time.

I've mentioned this a million times, but Philip is most definitely the brains behind most of our meals. He's always coming up with delicious recipes, I don't know how he does it. So the other night, I asked him to make me a yummy pasta dish that included my favorite Hillshire Farm Smoked Sausage.

So we present to you...



And oh my goodness, it was so good. Veggies, Sausage, Spaghetti, Vodka Sauce, yes please. You can head to your local Kroger store to pick up everything you need to make this yourself!

 Ingredients: 
  • 1/4 of a red bell pepper
  • 1/4 of a green bell pepper
  • 1/4 of a yellow bell pepper
  • 1/2 of a medium sized onion
    *peppers & onions chopped into 1/2 inch cubes
  • 2 tbsp olive oil
  • 1/4 cup chicken broth
  • 2 garlic cloves, minced
  • 1/4 cup parmesan cheese
  • 1 can of dried tomatoes
  • 2 tbsp of tomato paste
  • 1/4 cup vodka
  • 1/2 heavy cream
  • 14 oz (1 package) or Hillshire Farm Smoke Sausage
Directions:

Add olive oil to 12 inch sauce pan and saute onions and garlic over medium-high heat until garlic becomes transparent (5-10 min). Add bell peppers and sausage and cook until sausage begins to brown (5-10 min). Add canned tomatoes, vodka, and chicken broth, bring to a boil and reduce by half (15-20 min). Add cream and continue to reduce for another 5 min while continually stirring. Reduce heat to medium-low and stir in parmesan cheese.

Put sauce over spaghetti and salt & pepper to taste. Also, if you want to time the pasta and the sauce to be done around the same time, start boiling your spaghetti when before you add the cream to your sauce.







And there you have it! This entire dish takes under 30 minutes to prepare, and would make a wonderful family meal. Or if you're feeling romantic, make it for your significant other for a date night ;-)
